Spring Treat Recipes

Happy first day of spring! Spring has sprung and I am so happy to be past the “Seattle freeze” that hit us in February and see the sun making an appearance. This change means that new fruit is in season and it’s time to bake some new treats!

Lemon Bars

I’ll admit, lemon is not my usual go-to spring flavor. But, I wanted to try something new and these lemon bars did not disappoint!

  • 1 cup softened butter

  • 1/2 cup white sugar

  • 2 cups all-purpose flour

  • 4 eggs

  • 1 1/2 cups white sugar

  • 1/4 cup all-purpose flour

  • 2 lemons, juiced

  1. Preheat oven to 350 degrees.

  2. Blend together softened butter, 2 cups of flour, and 1/2 cup of sugar. The texture with be like a crumbly crust. Press into the bottom of an ungreased 9x13 pan.

  3. Bake for 15-20 minutes, or until firm and golden (for me, it took about 25-28 minutes). While the crust is cooking, whisk together the remaining 1 1/2 cups of sugar and 1/4 cup of flour. Whisk in the eggs and lemon juice. Pour over the baked crust.

  4. Bake for an additional 20 minutes. Allow plenty of time to cool and for the bars to firm up before cutting into pieces.
