Simply Simple Dessert Recipes

Hello spring! This season (and year) has sure gotten off to a bit of a rocky start, and I, like most people, have found myself sequestered indoors. To fill my time, I’ve been baking and creating up a storm! I’ve put together three simple, easy dessert recipes that anybody can make and will hopefully make your isolation a little brighter.

Chocolate Blueberry Clusters

  • 1 cup chocolate chips

  • 1/2 tablespoon coconut oil

  • 1 cup blueberries

  • Sea salt

  1. Line a small baking sheet or plate with parchment paper.

  2. Melt chocolate chips in a small bowl and stir in coconut oil.

  3. Spoon a small dollop of melted chocolate on the parchment paper. Top it with 3-4 blueberries. Drizzle chocolate on top of the blueberries and lightly sprinkle with sea salt.

  4. Freeze roughly 10 minutes so the chocolate sets. Then enjoy!

Pop these clusters on top of a bowl of ice cream as a yummy topping!

Strawberry Peach Bites

  • 1 package of Crescent Roll Dough

  • 1 peach

  • 2 strawberries

  • 2 tablespoons butter

  • 2 tablespoons sugar

  • 1/2 teaspoon cinnamon

  • 1/2 cup confection sugar

  • 1 1/2 tablespoons milk

  1. Preheat oven to 375 degrees.

  2. Cut the peach into eight wedges and the strawberries into eight slices.

  3. Separate the dough pieces on a parchment lined baking sheet.

  4. Mix together the sugar and cinnamon in a small bowl. Sprinkle the mixture evenly over each piece of dough.

  5. Melt the butter and stir in the fruit pieces so they’re all evenly coated.

  6. Place one slice of peach and strawberry on the long end of a dough piece. Carefully roll, like a regular crescent roll. Pinch the edges and sides closed to keep the fruit inside.

  7. Brush any addition butter on top and sprinkle with cinnamon.

  8. Bake for 12-14 minutes or until golden brown.

  9. While bites are in the oven, add milk to the confection sugar, stirring constantly until the consistency becomes smooth.

  10. When the bites are out of the oven, drizzle the glaze over each bite.

You can also substitute a peach for a mango in these bites!

Apple Turtles

  • 2-3 Granny Smith apples

  • 1 cup of chocolate chips

  • 1 tablespoon of coconut oil

  • Caramel sauce

  • Chopped pecans

  1. Cut the apples into slices.

  2. Melt the chocolate and stir in coconut oil. Dip half of each apple slice into the chocolate.

  3. Arrange the slices on a baking sheet lined with parchment paper and sprinkle with chopped pecans. Refrigerate for 10 minutes.

  4. Drizzle caramel sauce over each slice and refrigerate for an additional 5 minutes. Enjoy!

Personally I use vegan chocolate chips, so this dessert can be enjoyed by anybody, no matter their food lifestyle!
