Strawberry Granola Parfait Recipe

The start of summer is right around the corner, which means sunny days, picnics in the park, and delicious fruit. I especially enjoy seasonal desserts, and in the spirit of summertime, I thought something fresh and sweet would be ideal. Hence, strawberry granola parfaits.

I truly think this is such a great summer treat. The granola provides the needed crunch when paired with the creamy yogurt. Additionally, the strawberries are the perfect fruity flavor. My mom passed along her granola recipe, which makes this recipe even sweeter. Overall, the parfaits are fairly easy to assemble and really hard to put down.

Strawberry Granola Parfait

  • 3-4 cups of oats

  • 1/2 cup chopped almonds

  • 1/2 cup chopped pecans

  • 1/2 cup sweet flaked coconut

  • 1/4 cup honey

  • 1/2 cup coconut oil

  • 12 quartered strawberries

  • 2 teaspoons sugar

  • Pinch of cinnamon

  • 1 cup vanilla Greek yogurt

  • 2 tablespoons brown sugar


  1. Preheat oven to 300 degrees and line baking sheet with parchment paper.

  2. Combine oats, nuts, and coconut in a bowl. Add together honey and coconut oil and microwave until melted and smooth. Pour over oat mixture and mix together.

  3. Evenly spread out mixture over the baking sheet. Bake in 10-15 minute increments, mixing after each time frame. Bake for a total of 35 minutes or until mixture is golden.

  4. While granola is baking, place strawberries in a shallow dish and sprinkle with sugar and cinnamon. Stir together to coat and let sit for 30 minutes.

  5. In a small bowl, mix together yogurt and brown sugar until smooth.

  6. In serving vessel, layer yogurt mixture, strawberries, and granola. Repeat. If you have leftover yogurt and granola, top parfait as final layer.
