Peppermint Hot Cocoa Cookies
There’s something so cozy and magical about a cup of hot chocolate on a cold winter’s day. But you know what would make it even better? Being in cookie form!
I wanted to try a recipe that would be perfect for family gatherings, to give to friends, or to enjoy yourself during a holiday movie marathon. So, I took a hot cocoa cookies recipe and tweaked it, adding peppermint on top to make it even more perfect for winter. This sweet treat perfectly embodies the coziness and deliciousness of the season!
Peppermint Hot Cocoa Cookies
1/2 cup softened butter
1/4 cup sugar
1/4 brown sugar
1 egg
2 tbsp milk
1 tsp vanilla
1 cup and 2 tbsp flour
1/3 cup powdered hot cocoa mix
1/3 cup cocoa powder
1/2 tsp baking soda
1/4 tsp salt
1/2 cup marshmallow bits
1/2 cup chocolate chips
Candy cane
Preheat oven to 350 degrees and line a baking sheet with parchment paper.
With a stand mixer and paddle attachment, combine the butter, sugar, and brown sugar. Mix until combined.
Add in the egg, milk, and vanilla. Mix until combined, making sure to scrape off sides of the bowl.
Add in the flour, hot cocoa mix, cocoa powder, baking soda, and salt. Mix until combined.
Stir in marshmallow bits and chocolate chips.
With a cookie scoop, scoop dough onto the prepared baking sheet(s).
Make for 8-10 minutes. In the meantime, crush up a candy cane into small pieces.
When you take the cookies out of the oven, lightly sprinkle candy cane bits onto the top of the cookies while they are still hot.
Let the cookies fully cool, then enjoy!
