Mixed Berry Cream Cheese Loaf
Happy summer!
To celebrate, it felt appropriate to bake a little something with fresh, fruity flavors. The recipe I chose is actually one I’ve made before, but as a cake. This time around, I wanted to try making it as a loaf.
This mixed berry cream cheese loaf is a great treat to have around the house or share with friends. It evokes summer vibes and is very easy to make.

Mixed Berry Cream Cheese Loaf
3/4 cup dark brown sugar
2 eggs
3/4 cup sour cream
1/2 cup melted unsalted butter
1 teaspoon vanilla extract
3/4 teaspoon kosher salt
1 1/2 cups flour
1 1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 cup cold cream cheese
1 cup raspberries and blueberries
Sugar
Preheat the oven to 350 degrees. Coat a standard loaf pan with nonstick spray and line the pan with parchment paper so it hangs over the two longer sides.
In a large bowl, whisk the brown sugar and eggs until it is pale and foamy. Whisk in the sour cream, butter, vanilla, and salt until smooth and fully combined.
Whisk in flour, baking powder, and baking soda.
With your fingers, break up the cream cheese into small chunks and scatter over the top of the mixture. Fold in the cream cheese and 3/4 cup of the berries.
Pour the batter into the pan and sprinkle the remaining 1/4 cup of berries on top. Sprinkle a small amount of sugar over the top as well.
Bake in the oven for 50-60 minutes, until puffed and golden. Insert a toothpick into the center, making sure it comes out clean, to ensure it is baked fully. Cool on a rack for at least 15 minutes before removing the loaf from the pan.
